Todayโs full shift POV cooking video starts with breakfast service, then moves into mise en place and lunch service โ where I made a homemade chicken โdรถner kebabโ special from scratch.
This is not a traditional takeaway-shop dรถner method, but it is a version I used to make years ago in the kitchen, sometimes with lamb and sometimes with chicken. I havenโt made it for a long time because it is very time-consuming, and these days we normally buy this type of product in. But because we had a full team on this shift, I finally had the chance to make it again.
For the chicken dรถner mix I used chicken thigh, shawarma seasoning, Happy Chef/Kucharek, salt, pepper, garlic powder, onion powder, harissa spice mix, Cajun seasoning, turmeric, yoghurt, and panko breadcrumbs. The mix was minced, half of it was minced again, then everything was combined, rolled out between baking parchment, baked until cooked but not dry, finished on the griddle for colour and smoky flavour, then sliced into dรถner-style shavings.
It is not โproperโ traditional dรถner, but with the equipment we have in a staff canteen kitchen, this method gives a pretty impressive result โ and it tasted extremely good.
The video begins with breakfast service, then prep, then lunch service featuring homemade chicken dรถner wraps.
Real kitchen work, full shift POV cooking, breakfast service, prep, lunch service, and a homemade special from scratch.

I used to make versions like this years ago with lamb or chicken, long before the homemade kebab trend started going viral online. We normally buy this product in now because making it from scratch is very time-consuming, but on this shift we had a full team, so I had the chance to bring it back.
Chicken thigh, spices, yoghurt, panko, minced, rolled, baked, finished on the griddle, then sliced into thick dรถner-style shavings.
Not traditional โ but for a staff canteen kitchen, it worked beautifully ๐๐๐
