🌰 Homemade Nut & Fruit Bars
Ingredients
2 cups pitted dates
2 cups dried figs
1½ cups dried apricots
1 cup raisins
1 cup rolled oats
1 cup almonds
1 cup walnuts
1 cup cashews
1 cup pistachios
1 cup pumpkin seeds
1 cup sesame seeds
1 tablespoon chia seeds
3 tablespoons honey
1 teaspoon cinnamon
👩🍳 Instructions
1. Prepare the dried fruits
If the dates, dried figs, and dried apricots are hard, soak them in warm water for 10–15 minutes. Drain them well and pat them dry to remove excess moisture.
2. Toast the nuts
Add the almonds, walnuts, cashews, and pistachios to a dry pan. Toast over low to medium heat for 3–5 minutes, stirring frequently. Remove from the heat and let them cool completely.
3. Chop the nuts
Once cooled, roughly chop the toasted almonds, walnuts, cashews, and pistachios with a knife. Keep them slightly chunky for a nice crunchy texture.
4. Toast the oats, pumpkin seeds, and sesame seeds
Add the rolled oats, pumpkin seeds, and sesame seeds to a dry pan. Toast over low heat for 3–4 minutes, stirring constantly. Remove from the heat and let them cool.
5. Make the fruit mixture
Add the dates, dried figs, dried apricots, raisins, honey, and cinnamon to a food processor. Blend until everything turns into a thick, sticky paste.
6. Combine the ingredients
Transfer the blended fruit mixture to a large bowl. Add the toasted oats, pumpkin seeds, sesame seeds, chopped nuts, and chia seeds. Mix everything thoroughly until well combined.
7. Shape the bar
Place the mixture on a sheet of parchment paper. Using your hands, shape and roll the mixture into a firm, compact log, pressing it tightly as you roll.
8. Chill
Wrap the roll tightly in parchment paper or plastic wrap and place it in the refrigerator for 2 hours, or in the freezer for 1 hour, until firm.
9. Slice and serve
Remove the chilled roll and cut it into even slices using a sharp knife.
