This is a fried eggplant gangjeong that you absolutely must try making before eggplant season ends. Simply scooping out the inside of the eggplant completely transforms the mushy texture into a crispy and chewy one. It is a recipe that will make you automatically say it is tastier than chicken, so be sure to save it and give it a try.
Ingredients
4-5 eggplants
1-2 pinches of salt
A little pepper
3 tablespoons of frying flour (or starch, glutinous rice flour)
1 bell pepper
Appropriate amount of cooking oil for frying
[Sauce Ingredients]
1 tablespoon of soy sauce
1 tablespoon of oyster sauce
1 tablespoon of sugar
1 tablespoon of corn syrup (or oligosaccharide)
1 tablespoon of chili oil (can be substituted with chili powder and cooking oil if unavailable)
3-4 cloves of garlic (roughly minced)
A little star anise (optional)
Instructions
1. Cut off the stems of the eggplants, split them in half, and then cut them crosswise once more.
2. Remove the soft part containing the seeds from the inside of the eggplant. Since this part contains a lot of moisture, you must remove it beforehand to prevent it from becoming mushy later.
3. Slice the prepared eggplants diagonally into pieces about two finger lengths in size. 4. Place in a mixing bowl, add 1-2 pinches of salt and a little pepper, and toss lightly to season.
5. Mix soy sauce, oyster sauce, sugar, corn syrup, chili oil, minced garlic, and star anise (optional) to make the sauce.
6. Add 3 tablespoons of frying flour to the seasoned eggplant and toss thoroughly.
7. Fry until crispy and golden brown.
8. Lightly sauté the bell peppers in a pan, then pour in the prepared sauce and bring it down quickly until the liquid is gone.
9. Add the fried eggplant and quickly toss to coat only the outside with the sauce.
10. Plate and serve! The Eggplant Gangjeong is complete.
