The pork belly is cooked sous vide for hours in a water bath, giving it its incomparable juiciness. The Thermomix mixing bowl serves as a water bath. When seared, the pork belly doesn't lose its juiciness, remains buttery tender, and the rind becomes irresistibly crispy.
