If I need to sear the picanha at the end, I shift the embers and add some FOGO lump charcoal to really crank up the heat.
For thinner cuts or quick cooks, I always use FOGO lump charcoal.
Then, season to taste and always add some wood to smoke the meat.
I cook on a 22-inch Weber Kettle.
I would love to go back to lump, but around here, it costs a LOT more than the briquets. Also, Kingsford leads the pack in being high priced as compared to other brands of briquets - if you can find them.
I'll stick to Fogo for grilling and lumber jack pellets for smoking in the pellet grill!
