■Sake-Steamed Hamburgers
No onions, no breadcrumbs, no sauce.
A feast for those days when you want to relax ◎ A plump, flavorful hamburger steak
〈Recipe〉
▽Ingredients (Serves 2)
A. 220g ground beef/pork
A. 1/2 slice bacon, roughly chopped
A. 1/2 cup (100ml) milk
A. 1 teaspoon potato starch
A. 1/2 teaspoon salt
A. 1/2 teaspoon sugar
A. 1/4 teaspoon grated garlic
A. 6 sprigs nutmeg powder
・14-20 cherry tomatoes (1 pack)
・2 teaspoons olive oil or 10g butter
・1/4 cup (50ml) cooking sake
Lemon (sliced into wedges), to taste
▽Directions
① Finely chop the bacon with kitchen scissors or a knife. Remove the stems from the cherry tomatoes. ② Add A to a frying pan and mix thoroughly with a rubber spatula until sticky (the key is to mix thoroughly enough to form strings).
③ Divide the meat mixture into 2 equal portions. Place each portion on plastic wrap lightly coated with olive oil (not included in the recipe) and shape into ovals.
④ Lightly wipe the frying pan used in ② with kitchen paper. Add olive oil (or butter) and heat over medium heat. Add the shaped hamburger patties and cook for about 3 minutes, then flip them over.
⑤ Pour in the cooking sake, cover, and steam over low-medium heat for about 10 minutes. After 5 minutes, open the lid and add the cherry tomatoes and steam together. (If the water starts to evaporate, add more water.)
⑥ Place the hamburger patties and cherry tomatoes in a serving dish, garnish with lemon if desired, and drizzle with the remaining juice from the frying pan.
