7 years later i spent about 15 minutes trying to find this recipe, burried aming the tens of people who’re just discovering this amazing bread. Still, this is my favorite recipe of all the ones out there.

i want to congratulate you for an exemplary video and recipe. it worked exactly has you described and photo'd. not since i had this bread in japan many years ago have i been able to duplicate it. your instructions are spot on and your lovely voice a pleasure to listen to. i plan to do a blog posting with link to your blog. i am the author of several cookbooks including the bread bible and am thrilled to add your bread to my personal favorites repertoire. i am deeply impressed. rose levy beranbaum

This video is phenomenal, you do an amazing job on educating your viewers, like myself lol, who have no idea about baking bread. Thank you!

That was the most informative & detailed instruction I've seen yet. Great job!

You video was my very first introduction to making bread. It's been several years now and I've come back to relearn how to knead by hand instead of relying on the mixer. Your video is so important to me. You teach with such thoroughness and everything is so clear. Thank you for sharing your knowledge with us.

I made this today and I’ve already eaten half the loaf!! So sweet and fluffy, it’s as soft as wonderbread but it’s REAL. Kneading it was the worst because it started as a much stickier and messier dough than in the video, but it was great within 25 minutes or so. I’d love to make these as dinner rolls next!

I'm so glad I clicked on this. I wasn't looking to bake anything but "Hokkaido bread" intrigued me. I learned so many new things from this video! Thank you!

I made this a few times and it came out perfect everytime! I'm going to use this recipe to make cinnamon buns tomorrow!

I just made this recipe today without milk powder! I spent 5 hours making this- including waiting time for proofing. Lol It was a successful bread, taste good just like those I can buy from outside, but the surface is not soft, with bit of wrinkles - maybe I should lower my oven’s temperature/ lesser egg wash. However overall, it doesn’t look like Hokkaido milk bread, more like a normal bread. But it’s good for a first timer like me 😌 thank you!

I made this without milk powder impromptu and it turned out great ! Super super delicious just that i added some fillings inside the bread and wrapped it! Really excited to make this again soon!! Thanks for the great recipe !!

This is the first video I’ve seen with an in-depth explanation of the kneading process.

Your video is one of the few that teaches kneading and how to help dough rise better in a cold environment. These extra tips make all the difference. Thank you!

I made this and the buns came out so beautiful, the crumb was perfect and soft🍞 ill need to write this into my recipe book

Excellent tutorial video. I made it first time perfect like you promised. My only regret is that I only made half the recipe as in the video. Can't wait to make it again
