Kent, one of my dearest friends owns a cafe in our small town and years ago I had him make me a custom dish. I asked for his chicken fried chicken breast and to cover it in queso, diced tomatoes and chives. Someone saw it when they brought my plate out and they said they wanted what I got. Today, several years later, the "Ricky's Special" is still their number one seller.

When I moved to Colorado in 2000, my girlfriend at the time took me on a road trip around the state to celebrate my retirement from the Air Force. Every morning, for two weeks, we ate breakfast at whatever mom and pop restaurant was open. And every day I ordered chicken fried chicken or steak with eggs and whatever else came with the meal. But I tell you, sir, nothing looked as good as what was on your plate. Thank you for recognizing our brave military, providing an awesome recipe, culinary tips, and being downright entertaining. Mr. Kent, I’ve been watching you for quite some time now and it wasn’t until now I realized exactly why you are one of my favorites. Your attitude, demeanor, quick wit 😂 which I love, and your passion for the simple things in life remind me of my dad who passed away in 2022. I’m a firm believer if he was still here and I was able to show him your videos, he’d definitely be asking for merch 🤣🤣 this was also one of his favorite meals (add some corn & green beans and you are all set! 😂) he was a simple man who enjoyed simple things he didn’t care for the fancy stuff and you embody that so much and I say all of that to just say thank you for this reminder that while he might not be here anymore physically, he’s always in my heart ❤️ God bless and I look forward to where the trail takes you next!!
