Pumpkin Risotto for One: Creamy with a €1 Slice

I'm Bruno, a former chef. In this video, I'll make pumpkin risotto for one person: it costs around €2 per dish and is creamy without cream. We'll make it in seven steps, in the same order you'd make it in the kitchen.

I'll explain which rice to choose (Carnaroli or Vialone Nano, 70 grams per person), which pan to use, how to recycle leftover broth into cubes, how to clean and cut the pumpkin, and the ten-second step that turns it into cream. Then, the creaming, with cold butter and Parmesan cheese removed from the heat, and the flat dish. With a €1 slice of pumpkin, you cook twice.
