I think the reason the mint exploded the way it did was due to all the tiny particulates, which gave a lot of surface area for bubble nucleation. This will cause the bubbles to rise rather than be absorbed into the liquid.

I wonder if the reason that savory items become so off-putting when carbonated is that the only time you'd find foods giving off gas like that in nature are when things are fermenting or rotting.

Keep in mind the colder the liquid the better it carbonates. So if the Dr Pepper was left out and warmed up to go flat you wouldn't have as much carbonation in it. Soda Stream recommends 4-7 °C

When you sodastream something, it makes carbonic acid, which while acidic, can enhance bitter compounds, in combination with the airation of the CO2, it's likely just enhancing what's present in Guiness, which nitrogen avoids given it's inert.

I have learned from watching Big Clive, that there is basically no chance the soda stream bottle would ever explode. They have a pressure valve in the top of the unit, that opens and bleeds off pressure if it gets too high. This is also why soda stream only recommend carbonating water in their units, because anything sticky can get into the valve and cause it to get stuck.

Clive runs much more CO2 through than you guys did, he goes for the "Triple fartulation" as he calls it 😂. The pressure valve makes a farting sound when it goes off, and he does this 3 times. This gets maximum fizziness in the drink.

You do have to be careful when releasing the button when you do this. You have to keep it pressed down, and slowly lift your finger off, stopping to let the liquid settle if it starts to get too high. If not the very carbonated liquid will start leaking everywhere
