I had simmered eggplant (prepared by slicing the eggplant, scoring the flesh, pan-frying it in oil, simmering it in a mixture of mirin, sake, sugar, and mentsuyu (noodle soup base), and topping it with chopped green onions), along with miso soup (containing dried daikon strips and wakame seaweed) and brown rice.
The eggplant had a wonderfully tender, melt-in-the-mouth texture, and it was delicious—fully infused with that sweet-and-salty flavor and the savory dashi stock from the *mentsuyu*.
I was a little worried I might have seasoned it too strongly, but it turned out to be just right when eaten with the green onions—absolutely delicious! (Haha)
As for the green onion I dropped? I made sure to eat it—chewing it thoroughly—after the cameras stopped rolling. (Haha)
