Tomato Pie

Ingredients:

4-5 large tomatoes
½ cup green onions, chopped
Fresh basil, chopped

Cheezy Sauce:

1 ⅓ cup or 1 15oz can navy beans
3/4 cup hempseeds
2 cloves garlic
5 tbsp nutritional yeast
1 lemon, juiced
3/4 cup plant milk
Optional:
1 tsp salt or to taste

Pie Crust:

1 ¼ cup fine almond flour
⅓ cup arrowroot powder
¼ tsp baking powder
2 tbsp ground flax
5 tbsp water
Optional:
1/4 tsp salt or to taste

INSTRUCTIONS

Slice the tomatoes about ½ inch thick. Place the tomato slices on a clean cotton kitchen towel or paper towels.

While the tomatoes sit, begin preparing the pie crust.

Mix ground flax and water and set aside.

Combine almond flour, baking powder, arrowroot, and salt together in a bowl.

Add the flax mixture and mix with a spoon until it begins to come together. Use your hands to bring it all together to form a ball of dough.

Place the ball of dough between 2 sheets of parchment paper to roll. Roll to fit a 9-inch, deep dish pie pan.

Poke the crust with a fork, cover and place it in the freezer for 20 minutes.

In the meanwhile, preheat the oven to 400 F. Cover the pie crust with parchment and use pie weights or other heat-safe material to weigh the crust down. Bake for 15 minutes. Remove from the oven.

While the crust is baking, prepare the “cheezy” sauce by combining all of the ingredients in the blender and blending until smooth.

Begin layering the tomatoes in the parbaked crust, do not overlap the tomatoes. Between each layer of tomatoes add a generous amount of cheezy sauce, sprinkle some green onions and fresh basil. Add the next layer of tomatoes, cheezy sauce, green onions, and basil. Finally add the final layer of tomato slices.

Bake at 375F for 30 minutes. Remove from the oven and allow to cool for at least 30 minutes. The longer it cools, the more it will set. Enjoy!
