Eight dinners, every one sized for one person, and every one goes into the dish cold and raw.

Nothing gets browned. Nothing gets boiled. Nothing gets stirred on a burner. One dish, into the oven, out again done.

The eight:
1. Baked ziti, pasta goes in dry
2. Chicken and stuffing bake
3. Sausage, peppers and potatoes
4. Cheesy rice and broccoli with chicken
5. Taco rice bake
6. Pork chop with apples and sweet potato
7. The whole roast dinner, in one dish
8. Sausage, egg and cheese strata

Most of what makes cooking hard is not the cooking. It is the standing. It is the pot to drain and the pan to scrub. Take those away and a hot dinner stops being a decision you have to brace for.

Each one here has what you need, how you make it, the one thing that decides whether it works, and three substitutions in case your cupboard looks different from mine. Nothing needs a mixer, a thermometer, or anything you do not already own.

An honest note: prices are about, for a normal week in most of the US. Nobody pays me to recommend anything and no store or brand is named on purpose.

Food safety, said plainly: whatever is left goes into the refrigerator within two hours, not onto the counter to cool all evening. Shallow containers cool faster than a deep dish. Anything with raw meat in it gets cooked all the way through on the night.

Which of the eight are you making first, and is there somebody else at the table these days or is it just you? Tell me in the comments and say what part of the country you are in. I read every one with my coffee.
