It's very gratifying to hear about all the famous Restaurants with their own specialty foods when one only hears about the culinary horrors of the 50's

Grew up in So Cal. Old enough to remember all these places. Thanks for the walk down memory lane.

Lived in LA for many years.  One dish was my wife's and my absolute favorite:  Lobster Selandia appetizer at Scandia.  Often, we would go and each order like 4 appetizers of it each for dinner.  Chilled lobster was perfect and that sauce was insanely good.

At the 3:30 mark, in an episode of I Love Lucy, Lucy and Ethel were in the Brown Derby when William Holden, in the next booth, ordered the Cobb Salad.

Linney's was THE deli in Beverly Hills...Nate N Als came later. Hot fudge sundae at Wil Wrights....Cantonese food at Ah Fongs....Chicken crepes, brunch The Bel Air Hotel.....Table side Caesar Salad Dan Tanas.

The Brown Derby shaped like a hat was on Wilshire Boulevard across the street from the Ambassador Hotel.  It was the original.  The one on Vine was just a common building, both now gone. The last one in Arcadia is still there I believe.

I serviced the carving chef at Slay's steaks on Hampton in St. Louis , I made the resin cooked baked potatoes table side while chef carved prim rib or tenderloin grilled table side ,  I also made the Caesar salad table side which was a Slay's signature , , , they cooked over gas fired stone briquettes , they cooked their baked potatoes in pine resin , and did table side cooking they couldn't do today , I cooked at Garavellis on Manchester in Rock Hill , Tony's on the hill , Luigi's on Watson at arsenal , and Parente's at Hampton and Columbia , all before I went in to the Corps ,
I almost got to service Hack in the tenderloin room at the Chase Park Plaza  but the Tenderloin Room caught on fire in 68 , Chef Hack moved the live fire down stairs to the Steeple Chase Room the same night of the fire and continued cooking with live fire grilling tenderloins , rib eye and porterhouse , yep , the potatoes were in the resin and the table side salad and appetizers continued as usual , , , of course the prime rib still came out of the kitchen non stop to be carved table side , , , in the late 70's we gas Sam Wilson's Meat Market at the barn of Lucern on Kerhs mill and Clayton roads , St. Louis's last great steak house , , ,😢 ok , Ruth's Chris steak house , I went there and was seated at a table in the aisle near the front door , it was crazy busy , the steaks weren't that special , what wows people is TV he flavored butter TV hey top their steaks with , , ,
