The big challenge with learning Blender is not the app itself but the fact that you actually need to learn how to 3d model. I assume this is why most users quit since they have no actual goals. The more niche your goals are, the more successful you'll become: "I want to learn how to create hard surface models of every-day objects" or "I want to create low-poly character models" is more better than "I want to learn Blender." Once you settle for your niche, you lock onto and view resources that relate to your niche. And tons of practice is needed so you can retain 3d knowledge and techniques.

My blender experience is to finish the donut tutorial, then not use blender for a year or more, forget everything I learned and start over with the newest donut tutorial again

You're in one hell of a rabbit hole now
Blender can do basically everything. From video editing to liquid simulation. And that's not even counting the add-ons.
I got a bundle on humble bundle in December, and I'm not even joking, it literally unlocked a whole new world. From accurate terrain generation and sky simulation, to vast asset libraries, to camera modifications, instant streets, one that makes your stuff clay and one that just turns blender into Photoshop.

I'm a 3d artist and this is a very accurate representation of my experience learning blender. You had me rolling. But in all seriousness I am very impressed of how much you were able to accomplish. The human form is one of the most challenging things to learn to model and your train of thought about approaching the model combined with your understanding of how to use the interface was impressive and entertaining to watch!!

its sometimes fun to just go into blender and do random stuff (also for the circle to work you need to create it and press F for it to actually have a face.)

The donut tutorial is absolutely legendary I'm pretty sure every Blender artist starts with it!!

If I'm to be optimistic about why most people quit half way through I'd say it's probably because for what they want to create they don't need all the advanced particles systems and geometry nodes to do it, so just stop there and make their own stuff.
