I will always be happy to see the moka become more appreciated, and I 'm happy to help! By the way, the bigger the moka, the coarser you can afford to go and the more soup-like coffee you can make. In a 6 cup you can easily get 5-6ml/s if you use pourover size grind (I tried 80 clicks on a kingrinder k1 and it works fine). In that case it might still be a good idea to start with warmer water, although I almost never do it. For me, the 1 cup gives the best taste, but I tend to enjoy classic espresso taste (though medium-light/acidic vs bitter), instead of filter-like taste. What I would be interested to see is if there is actually a practical limit to how big a moka can be that still works decently well. Could be that a 12 or 16 cup moka requires such a coarse grind size that it tastes terrible no matter what. I 'd be curious to find that out!

Ah yes a 30 minute video that YouTube has recommended before bed. It will help me brew a better pot of coffee tomorrow morning which I will inevitably need.

When we visited my wife's family in Sicily we went to an open air market. There was a stall that sold nothing but replacement parts for Moka pots (the real Bialetti ones with the little man on the side). Everything was there, down to hinge pins. I liked a thrifty culture that would rather fix something than throw it away and buy a new one.

In Spain we have a saying for avoiding bad mocha pots: "Café hervido, café perdido". It means: boiled coffee... lost coffee!

I alternate between my Robot, V60, and Moka depending on what I'm feeling like that day. The Moka is by far the most widely misunderstood of the three methods, and I'm sure your video will help a lot to correct that! When dialed-in it makes tremendous coffee in a delightfully straightforward way.

Matteo knows the way. Honestly many of the best coffees I’ve had have been out of my Mokapot, not my espresso machine.

The main reason I watch those coffee YouTube videos is to hear stuff like "He sent me simulation of mocha pots"

Please follow up on this with the brikka. I found it really difficult to get consistent results and recipes for that are all over the place. I remember taking out the rubber thing that creates the resistance at some point, because the resulting "regular" moka pot was so much easier to dial in. But despite the high variance, the best milk-based brews I had with a moka pot was with a brikka still.

OMG! This video is so awesome!!! I can't thank u enough! I been making decent coffee in 3 & 6 cup moka pots. Mostly induction these days. But recently got a 9 cup. I have had lots of issues - sputtering, leaky & also not brewing. I was also given advice that such large size moka is very difficult to use/dial in. So I gave up & put it away. Well this morning after watching you video, I made the most delicious 9 cup coffee! I think the 2 things that u helped me the most was using room temp water; and adjusting the heat (stove top) after your brilliant explanation re pressure!!!! (I had already been grinding coarser & using my fav light roasts). Thank u sooooo much!!  🙏🙏🙏☕☕
