Can ivy honey make an incredible mead… or just a weird one? In this episode of City Steading Brews, we put rare British ivy honey to the test and create a traditional mead with one of the strangest flavor profiles we’ve ever experienced. From herbal and earthy notes to smoky Scotch-like aromas, this mead surprised us at every stage of fermentation.
Huge thanks to VIP member Chris Sharp for sending us this amazing honey from Becky’s Beezzzs in the UK!

This mead developed incredible earthy, herbal, smoky, and floral complexity that reminded us of peated Scotch, herbal tea, and wildflower honey all at once.
