Everybody cooks an egg the modern way now. Hot pan, high flame, done in a minute. It works, I suppose. It just doesn't taste like anything.

My mother never cooked one like that. She had a ledger she kept in pencil, on the shelf by the flour tin, and the egg page was the one with the most fingerprints on it. Fifty years on that farm in Iowa and she never once turned the flame past halfway.

I'll show you how she did it, and why it matters. A few of these will sound wrong to you at first. Try them anyway, one morning this week, and then tell me I was wrong.
