We start in freezing Yanbian, where steam rises off Korean rice cakes, blood sausage, and kimchi pancakes at the water market. Heading south, we hit sweltering Hebei, where donkey burgers and mackerel patties sizzle on hot iron pans in Baoding. Our final stop is a university market in Linyi, Shandong, filled with the smell of grain pancakes and preserved-vegetable pork pies.
