Tonight, I spend a quiet summer evening in Japan, grilling beautifully marbled Kuroge Wagyu over charcoal at a traditional irori hearth and enjoying sake from a new Mino ware sake set.
The night begins in darkness, with a small fire slowly coming to life in the irori.
For the first sake of the evening, I chose Asahiyama.
I poured it into a new Mino ware sake flask and cup, then simply watched the charcoal slowly turn red.
Eggplant, shishito peppers, and Japanese leek go onto the grill.
Then comes the centerpiece of the night — beautifully marbled Kuroge Wagyu.
I begin with just salt and pepper.
For the next pieces, I add a little garlic soy sauce and enjoy the sake while listening to the meat sizzle over the charcoal.
As the fat falls onto the glowing coals, smoke slowly rises.
Red embers.
The sound of Wagyu grilling.
One slice of beef, followed by one sip of sake.
Before I know it, I’m simply watching the fire again.
For another drink, I open Tamano Hikari.
The final course from the grill is thinly sliced Kuroge Wagyu loin.
I probably ate a little too much tonight, so I’ll try to keep things lighter next time.
A small plate of sushi brings the meal to a close.
After dinner, I dim the lights and boil water in an iron kettle while watching the remaining embers.
A typhoon recently passed through this part of Japan.
Thankfully, there was no serious damage here, but summer in Japan is also a season when we are reminded of the power of nature.
