These coffee-coconut biscuits are incredibly tender and aromatic! ☕🥥
Cocoa, coffee, and coconut come together perfectly here – slightly crispy on the outside, wonderfully soft on the inside. A simple treat that pairs perfectly with coffee or tea. 😋
🔺 100 g soft butter
🔺 1 pinch of salt
🔺 1 tsp vanilla sugar
🔺 60 g icing sugar
🔺 1 egg
🔺 30 g vegetable oil
🔺 220 g flour + a little more as needed
🔺 1 tsp baking powder
🔺 15 g cocoa powder
🔺 1 tsp ground coffee
🔺 1 egg white
🔺 1 tsp water
🔺 desiccated coconut
Cream the soft butter with salt, vanilla sugar, and icing sugar. Add the egg and vegetable oil.
Gradually add the flour and baking powder, kneading everything into a soft, slightly sticky dough.
Divide the dough into two parts. The lighter part should be slightly larger. Incorporate a little extra flour into the larger part.
Add cocoa and ground coffee to the smaller part and knead well.
Divide both types of dough into 12 portions each and shape them into balls. Place the dark balls into the light dough and form into balls.
Dip the biscuits in egg white mixed with 1 tsp of water, then roll in desiccated coconut and halve them.
Bake at 180 °C for about 15 minutes. 🔥
This results in beautiful two-coloured biscuits with a delicate coffee-cocoa aroma and a delicious coconut coating. ☕🍫🥥
Enjoy your meal! ❤️
