This is my BBQ take on Cochinita Pibil, and it definitely isn't an authentic version.
Traditional Cochinita Pibil is a Yucatecan dish traditionally cooked in a píib, an underground oven, with the pork wrapped in banana leaves and slowly cooked until incredibly tender.
I kept the achiote, citrus and spices, but put my own BBQ spin on it, smoking the pork on the Weber with oak before wrapping it and cooking it until buttery tender.
There were a few mistakes. A few questionable decisions. A couple of mishaps.
But somehow, it all came together.
Served in warm tortillas with pickled red onion, lime crema, hot sauce, coriander and plenty of fresh lime.
Forget about it.
