Hope yall know that Kent and Shannon have 3 cook books out there. I’ve cooked many of these recipes and haven’t found a bad one yet.

I'm a trucker, and I used to go down into the Rio Grande Valley in Texas quite regularly. On the rare occasion that I spent the night down there, I would stop for breakfast at this small diner that had room for maybe two trucks in their parking lot. They served the best huevos rancheros that I've ever had. Everything was made fresh that morning, from the tortillas to the sauce. I'd often get a scoop of beef fajitas on mine. That really filled me up for the morning!

When I saw that intro to your new show, it literally brought me to tears. You have worked so hard over the last 40 years and you deserve this. You're my very favorite cook in the world. God bless you and that wonderful Shan. She saw something in you that was far more greater, and put you on YouTube.

We live on a ranch in south Texas. Every Sunday I make chilaquiles verdes with chorizo and a fried egg on top. Make a side of refried beans using some of the chorizo fat! Perfect.

Hi there, Mr. Rollins! Another mexican here, watching your show since a few years ago; it's lovely how you cook some of our traditional recipes, which are also real comfort food. The huevos rancheros have a slightly different version in the Yucatan peninsula, they're called huevos motuleños: tostada, refried beans, fried eggs, tomato sauce, ham, cheese, some peas and a boiled habanero. I guarantee you'll love the dish as it's perfect for outdoor cooking, as well! Have a nice one, Cowboy!

Kent, you and Max Miller from Tasting History are what education and entertaining are all about: sharing a great recipe, showing the methods and giving the story behind it. Keep up the good work!!

Thank you, Cowboy! From a Cajun woman, I appreciate your stories and teaching me about true Mexican cooking. All we get here mostly is Tex-Mex. I love true Mexican food. Thank you!

Close your eyes, and pick any of the dishes this man makes? And you will have a winner. Never said such a thing in my life.. really, about anything.. Until now. Cowboy Kent ROCKS. I want to try something new? I know I can come here, find something, and NEVER be disappointed... unless I MESS up making it.. something I can't say never happens- lol.
