They kindly offered to kit the back of mine out so I drove the 3 hours down to them to let them work their magic!

at the moment they are locked in place by wooden devices with aluminium fittings. I'd say: you may wanna remove them? Here's why. You're gonna drive off road for sure! There aren't many fishing places one could reach without using dirt roads... ;o)
The wheel barrow will rattle slightly. Nothing wrong with that. But, the legs are locked in place now. The energy was transferred into moving the whole wheel barrow slightly through the trunk. Now it's directly transferred into the joint from the locks into the legs. And assuming, the aluminium sheets are made to last: it's proberly harder than the adjustable parts those the legs? The energy from the offroad bumpings will damage your wheel barrow over time. I'm pretty confident about that.
An easy fix might be: rebuilding the upper wooden plates of your locks with soft wooden sacrifical plates or at least changing the metal fittings into hard plastic fittings? My personal ideal solution would be: getting a short part of a thick pinewood board, cutting out the same plates as in the upper layer of your current locks and just interchange them. Replace them once in a while by new ones. Done. Cheap, easy to get the material, easy to DIY.
Just some thoughts. I'm not an expert. Just some thoughts! <3
