Farmed salmon is sold to us as a health food from glittering lochs and heather-clad hills. Underwater, it's a different story.
Up to 77 million fish are farmed and slaughtered in the UK every year. 52 million of them are Scottish salmon, crammed into underwater cages and circling for life while sea lice graze them down to the blood. Some are blind, with their eyes hanging out. Once the damage is trimmed off, the fillet looks fine.
Then the chemicals go in: pesticides and formaldehyde, a known human carcinogen. They go straight into the loch, because a net is not a wall. Below the cages, nothing survives. The lice spill out and kill the wild salmon too.
So who owns "Scottish" salmon? Two Norwegian companies, one Faroese and one Canadian. They make huge profits, take public money and have plenty of reach in Parliament.
As for the pink, farmed salmon flesh is grey. They feed the fish a pigment and pick the shade off a colour chart. Like Farrow & Ball, but less posh.
