Red, yellow, green—does it seem like the only difference is taste and color? But in fact, the hue of a bell pepper can reveal a lot about its composition and ripeness! We sent the peppers off for lab analysis and then embarked on a little culinary journey: we looked at how this vegetable is prepared in different countries and where the familiar stuffed peppers originated. We also found out who benefits from peppers, who should be careful with them, and whether it makes sense to plant their seeds. Enjoy!
