There was a time when almost every town in America had a diner. The kind with a long counter, a flat-top griddle that never really cooled down, and a waitress who already knew your order before you sat down. This video is a look back at 25 breakfast dishes that came out of those kitchens: some are classics you might actually remember, and some have almost completely vanished, even from the memory of people who used to eat them every week.

A few of these, like Spam and Pancakes or Creamed Chipped Beef over Waffles, will probably sound strange by today's standards. Others, like Scrapple, are still made today, just in one small corner of the country, and almost nowhere else. Either way, these were real dishes that fed real people, made fast on a flat-top for truck drivers, factory workers, and regulars who never even had to say their order out loud.
