Been a while since I played Elden Ring, so cannot remember if this applies, but if memory serves for parries, it is parry humanoids unless they are two-handing a great/colossal weapon. Not sure if those are still unparryable in Elden Ring, but I remember taking on Havel and learning the hard way that you can only parry his one handed attacks, not his two-handed attacks.
I think that reviving an ally mid-boss in nightreign is good, but not rushing to rev them right when they die. 9/10 times you will die too if you do that xd
