The heater, with the discount, is similar in price or less than the cheaper holding ovens. The heater/cooler is pricier but adding the dry aging option will make it worthwhile for some people. After all, buying a piece of beef to dry age is going to set you back more than $100 each time you dry age and you, hopefully, have to buy this device only once. I use one of my refrigerators to dry age but I would get better results if I would add a fan or use a product like this instead. Plus, you only need to pull the cooler out of storage when you use it so you don't have a holding oven taking up valuable space. Interesting video! I will put it on my Christmas wish list.

Would love to see the power usage of this machine over hot holds and working as a fridge. A cheap power monitoring plug from Amazon will show usage over time.

Would then be clear if this is something you could take camping to turn a cool box into a fridge using a portable power station of 1-3Kwh

Pretty slick device overall and great if you don’t have the space. I got a hot hold from my local restaurant supply store for less than this costs, but I can see how it could work for a lot of people
