You are doing great, Bruno, and people appreciate your sincerity and honesty. You can simply call it the East Sea or Danang beach.

You can use the cap of the filter and put the filter on top of it after you got every last drop of coffee. You won't have a mess on the table. That's what the cap is for.

Here’s a tip on how to prepare the coffee.
Take the lid off and flip it upside down on the table and set the “phin” or coffee filter on top so it doesn’t make a mess.

Then add the sugar syrup and ice to your glass as you like.

FYI, the typical Vietnamese coffee is called cafe sua da. Or coffee with condensed milk.
You should give that a try but tell them less sua (condensed milk) because they love it sweet.

Bruno . As a Vietnamese American I envy your coffee time.  Enjoy it brother.

Big thumbs up to you for being conscious of VN's feeling about the East Sea.  Doesn't hurt or kill you by respecting your host country.  

As for the Vietnamese coffee, I'm not a coffee drinker myself but all I know is that the only time I drink coffee is when I go to a Vietnamese coffee then I'd order their "cafe sua da".  Also, once the filtered coffee stops dripping, flip the lid upside down and put it on the table, then set the filter on top of that upside down lid.  Also, if you want a lighter version with less caffeine and less sweeet, I think that one is called "bac xiu".
