Ingredients (Serves 4)
・150g thinly sliced pork belly
・100g daikon radish
・1/2 carrot
・1/2 onion
・150g sweet potato
・1/2 konjac sheet
・600ml water
・2-3 tablespoons miso paste
・2 tablespoons mirin
・2 tablespoons sake
・1 teaspoon dashi stock
・Sesame oil 1 tablespoon
■ Directions
1. Cut the sweet potato into 1cm pieces and soak in water for 5 minutes.
2. Discard the water, cover with plastic wrap, and microwave at 600W for 3 minutes, then steam.
3. Slice the onion into wedges, the carrot into half-moon shapes, the daikon radish into chrysanthemum shapes, cut the konjac into bite-sized pieces, and the pork into bite-sized pieces.
4. Add 1/2 tablespoon of sesame oil to a pot and fry the pork.
5. Add the carrot, daikon radish, onion, and sake, cover, and steam over low-medium heat for 2 minutes.
6. Add the konjac and sweet potato, mix, add the mirin, and simmer for 1 minute.
7. Add the water and dashi stock and bring to a boil.
8. Skim off any scum, cover, and simmer over low heat for 5 minutes.
9. Add the miso, mix, and finish by adding 1/2 tablespoon of sesame oil.
