My uncle showed me many years ago that he put a few drops of vanilla into every gallon of paint. It helped remove that paint smell without ever smelling like vanilla. I know most paint these days is made with low VOCs, so there’s not nearly as much of an odor.
So I took his idea and started using it for my coffee-dyed paper. A few drops of vanilla makes a huge difference. The other big thing (and probably even more helpful) is to put a tablespoon or two of baking soda (not powder) info the coffee dye. This not only neutralizes the smell of the coffee, but it also prevents the paper from becoming acidic. And any person who works with paper knows that an alkaline pH is what you want, not acidic.
