There's a bag of shredded cheddar or a sleeve of orange slices in your fridge right now — and there's a good chance the law doesn't let it call itself cheese. Not in a scary way. In a wallet way. A former grocery fresh-foods manager, the man who ordered the cheese and cut the block by hand, walks the cheese case and shows which three of nine "cheddars" are actually cheese, and which are mostly water, salt and emulsifier sold to you by the pound.
The one line that settles it is the NAME of the food on the back — not the ingredient list, the name. "Cheddar cheese" is real. "Pasteurized process cheese," "cheese food," "cheese product," "cheese spread," or any four-word name is the law making them tell you it isn't. And the shorter the name, the tighter the rule it has to obey — right down to how much water it's allowed to be (real cheddar caps at 39%; a "cheese spread" is allowed 60%).
No brands attacked, no fear (yes, we deal calmly with the "cellulose is sawdust" scare). Just how to make your few dollars buy real cheese — starting with the plain store-brand block, which is the cheapest real cheddar in the whole case, and the one move that saves the most: buy the block and grate it yourself.
