Refrigeration increases “reducing sugars,” making potatoes more prone to forming acrylamide (a carcinogen) during high-temperature cooking (frying/stir-frying at 120°C or higher).
Refrigerated potatoes are safe for boiling, steaming, stewing, or microwave cooking. However, for frying or stir-frying, it is safer to let them sit at room temperature for about one week before use.

※じゃがいもの保存と調理の注意について※
冷蔵すると「還元糖」が増え、高温調理(120℃以上の揚げ物・炒め物など)でアクリルアミド(発がん性物質)ができやすくなります。
冷蔵したじゃがいもは、煮る・蒸す・茹でる・レンジ調理に使う場合は問題ありませんが、揚げ物や炒め物に使いたい場合は、常温で約1週間おいてから使うと安全です。
