What really happens in the joint with osteoarthritis
To understand why nutrition plays a role at all, it's worth taking a brief look inside the joint. Healthy cartilage functions like a smooth shock absorber. It absorbs stress, distributes pressure evenly, and ensures that the bones don't rub directly against each other. In osteoarthritis, this shock absorber gradually becomes thinner, cracked, and less elastic.
