INGREDIENTS
PASTEL DOUGH
1/2 cup heavy cream (110 grams)
1/2 cup unsalted butter (100 grams)
1/2 level teaspoon salt
2 cups all-purpose flour (270 grams)

FILLING
1 tablespoon olive oil (12 ml)
250 grams ground beef
1/2 tablespoon wine vinegar
1/2 cup grated onion (110 grams)
1 level teaspoon grated garlic
1 level teaspoon salt
1/4 level teaspoon black pepper
1 good pinch of nutmeg
1/2 teaspoon ground cumin
1 teaspoon oregano
200 grams of potatoes (raw with skin) or 150 grams of raw and peeled potatoes
Water for cooking the potatoes
2 hard-boiled and chopped eggs (100 grams)
2 tablespoons of green olives (27 grams)
1 tablespoon of finely chopped parsley (4 grams)
2 tablespoons of finely chopped chives (10 grams)
