This time, we visited “Soba-dokoro Mizumoto Yabu” in Katsushika, Tokyo.

Located in a quiet residential area, this is a traditional soba restaurant—but what most people order here is not soba, but katsudon. It’s a slightly unusual place where many customers come specifically for this one dish.
Their katsudon is made with thick-cut pork loin, deep-fried and then simmered in a flavorful broth prepared with traditional soba dashi. The taste changes depending on each step—the balance of the sauce, the way the egg is cooked, and the timing of the final finish.
