Temp control is important. Especially for vegetable texture. I'd recommend cold fermenting and storing anything more delicate. It takes more time but generally leads to better flavours.
If you don't have a big fridge then getting it as close to/under ground is generally the best alternative.
If you want to start a good vinegar then it's important you introduce some starter and it's important you get air contact (frequent stirring, transferring or a bubbler). Oxidisation is actually your friend and will eventually clarify cloudy vinegar!
Personally I'd really like to see more complete dishes using components from previous videos with guests to taste and give their thoughts!
I also really like when you use a combination of technique and ingredient that is novel!
You inspired me to make this kind of cider made form roasted oats and koji! It's Extremely delicious! Lightly, toasty, sharp, dry with a misleading extremely rich sweet aroma of the condensed water from a pot of porridge. It's also about 20% ABV so it absolutely knocks your socks off if you're not careful.

Bad thing about this is we will never know which one poisoned you! 😟

Please do some cooking videos with your various vinegars and pickles! Would love to see how some of the weirder ones work in actual dishes or even just how you would pair them as a side dish.
