I think a tiny important detail to add would be a ladder, or a path among the rocks from the water leading to the docks, so the swimmers have easier more believable access to the wayer
For the red building, you should add exterior stairs, or some sort of fire escape instead of or in addition to connecting it to the neighboring building
What about adding a little cave at water level between the two rock faces to the right of the new pier? Gives an opportunity to add a tiny finishing boat, or a secluded place for people to swim and explore.
One possible addition to the pier/boardwalks might be a bright colored ladder into the water. Lots of waterfronts have them, so if you fall in, you can easily identify them in a panic, and get out of the water
I feel like a good way to bring life into your city would be different types of trees like apple trees, spruce, birch, different coloured leaves and maybe flowers and bees/ladybird 1x1 tiles in those trees. Love the vids
6:18 in the small gap, I think that a little cave with gold in a chest or something could look good! Maybe with the part of the maffia story. Love your videos, keep it up!
Every aspect of your city seems so intentional and curated, while still maintaining a natural and inviting feel. This is my favorite MOC on YouTube. As for the rock face, I recommend keeping it simple to avoid competing for attention.

(Edit) I just remembered. In the harbor episode with 10000 pieces, there was a blue building where the red one is now. The pizzeria. What was that? No one noticed it.
I feel a good addition would be little wild animals. A few birds and squirrels in trees. A man walking a dog. A cat prowling on a wall. Some seagulls waiting for the fishermen to unload their fish by the docks. Things like that!
That new cliff rockface deserves a cave at the waterline. Could be some pirate booty inside, who knows? (I'm sorry @mogyesz2858, I posted this before I saw your comment. Let's go!)
