The meat gets shared with family, relatives, and the needy as an act of charity and worship. It's one of the things we hope to add to our good deeds scale to please God in hopes that He grants us entry into heaven.

Its not about meat or taste its abt sacrifice , the remembrance of Abraham (as) , to sacrifice your precious thing .

The purpose of the sacrifice to refresh the memory of Prophet Abraham, when He was ordered to sacrifice his son by slaughtering his son on the command of Allah, it was the toughest of trails that any human could face but the Prophet accepted is as God's will and so did his son Prophet Ismail, when he was just about to cut his throat he closed his eyes, Allah sent a lamb instead of Prophet Ismail's place and spared his life. This zeal and courage to sacrifice even your son which not to mention Prophet Abraham got in his old age, and was his only son. Is why Allah mandated it for all the future generations of believers to come to partake in it by sacrificing an animal and give it in the way of Allah. I may have not been the most correct but this where the spirit of Eid-ul-Adha comes from.

Most Important things we(Muslims) look for sacrificial animals according to Islamic guidance are:
Age : Must be an adult For Goats [ 2 Adult teeth= 1 year, 4 Adult teeth= 2 years], For Cows [Must be at least 2 years old with 2  Adult teeth,             4 Adult teeth = 3 years], Camels [At least 5 years old].
Health : Must be healthy(Shouldn't be malnourished), Not injured & Not sick (No broken legs/No broken horn/ No any other injury), active & beautiful.
Legally Owned : Should not be stolen.
