Chicken: 2 large boneless, skinless chicken breasts (sliced horizontally into 4 thin cutlets)
Seasoning: \bm{1/2} tsp salt, \bm{1/2} tsp black pepper, \bm{1/2} tsp garlic powder, \bm{1/2} tsp dried oregano or Italian seasoning
Browning: 2 tbsp olive oil, 2 tbsp all-purpose flour (for light coating)
Sauce: 3 tbsp unsalted butter, 4 cloves garlic (minced), \bm{1/2} cup chicken broth, 1 tbsp fresh lemon juice, 2 tbsp fresh parsley (chopped)
Instructions
1. Prep & Season: Pat the chicken cutlets dry with paper towels. In a small bowl, mix the salt, pepper, garlic powder, and oregano. Season both sides of the chicken cutlets evenly, then lightly dredge them in the flour, shaking off any excess.
2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 3 to 4 minutes per side until golden brown and cooked through (internal temperature reaches 165°F / 74°C). Transfer the chicken to a plate and cover loosely with foil.
3. Make the Sauce: Lower the heat to medium. Add 1 tablespoon of butter to the same skillet. Add the minced garlic and sauté for 30 to 60 seconds until fragrant (be careful not to burn it).
4. Deglaze & Simmer: Pour in the chicken broth and lemon juice, scraping up any browned bits stuck to the bottom of the pan. Let it simmer for 2 to 3 minutes until slightly reduced.
5. Finish: Stir in the remaining 2 tablespoons of butter until melted and glossy. Toss in the fresh parsley.
6. Serve: Return the chicken cutlets to the pan and spoon the warm garlic butter sauce over them. Serve immediately.
Serving Suggestions
Grains: Pairs excellently over white rice, buttered noodles, or mashed potatoes to soak up the garlic butter sauce.
Vegetables: Excellent alongside steamed broccoli, roasted asparagus, or a fresh side salad.
