Today we're back at school, but this time the teacher is Grandma! ❤️
This is one of those recipes that are part of a family's history. Recipes we've found on the table since we were little, recipes that someone has learned from those who came before, and that risk being lost if no one takes the time to learn them.
My mother-in-law's eggplants in oil, Enzo's mother, are one of them. They're always in our family, and this time we wanted to learn how to prepare them with her.
*An important clarification:* This is a traditional cold-prepared dish, preserved in oil, which requires special care due to microbiological risks, including botulism. It's not a recipe to be improvised, and the procedure shown should not be considered a guide to making safe preserves. Oil alone does not guarantee safe preservation.
We chose to tell it not as a tutorial, but as a family moment, to preserve at least in our memories those gestures and knowledge passed down from one generation to the next.
Because today we didn't just learn how to prepare eggplant. We spent time together, listened, and learned something that holds special value for us.
