▢ 1 cup all-purpose flour (120g)
▢ 1 teaspoon baking powder
▢ ½ teaspoon salt
▢ 2 large eggs
▢ ¾ cup granulated sugar (150g)
▢ ½ cup unsalted butter melted and cooled (113g)
▢ ¼ cup dark rum (60ml)
▢ 1 tablespoon vanilla extract
▢ 1 pound large apples peeled, cored, and chopped into ½” cubes, I like Granny Smith or Honeycrisp (2 to 3 apples/450g)
▢ confectioners’ sugar for dusting

My grandma made this. She had it as a very frugal recipe without eggs, rum and the option to use shortening instead of butter. It’s still delicious. The changes were necessary growing up in a very large farm family in rural Canada during the Great Depression.

I'm in love with this cake. I've made it yesterday and it's already gone. Instead of rum I used goat's milk. For vanilla I used bourbon flavored vanilla and incorporated some cinnamon into the dough which I also sprinkled on top before baking. DI-VI-NE

60 minutes comes out perfect. Tried two times. 35 to 40 minutes is impossible. THE BEST VERSION EVER!!!

Thanks, John. I am no cook, but have made three of these already. I just wanted to report that I reduced the sugar by 50%, and preferred the taste as well as reduced the harm!

Most of these comments mentioning that he said powdered sugar when he meant flour, use your common sense people! It said “all-purpose flour” on the screen while he was measuring out the flour, and why wouldn’t a CAKE recipe have any flour in it? It makes no logical sense to have used powdered sugar lol. All it takes is a tiny bit of critical thinking. You can also go onto his website and check the written recipe if you’re really that unsure.

Made it, LOVE IT! So easy, so good. I only used granny Smith and am surprised how good the combo with the rum is. In my tiny European oven, it only took 30 min. Love this recipe, will use it often

I just made this yesterday following Chef John’s Food Wishes video. The only sub I made was that I used brandy since I had some available. Next time I make it I’ll use your recipe with dark rum. It was still over the top yummy.
