Don't overthink this. The story and sub-plot regarding Aemond requires that something be done with Vhagar, so the writers just have the dragon "gone" at the moment. It's not some mysterious reason. It's just what fits with where the story is at present.

Vhagar has gone to lay EGGS, perhaps 3 eggs… for later?  I imagine a dragon in this book series needs time to lay eggs in a quiet spot.

One thing the don't do enough is show how much these dragons need to feed and like you said Vhagar probably need 10X the amount of the others to be comfortably fed.

Instead of Aemond riding around The Riverlands burning towns, they rewrote it so Aemond is at Harranhal & Vhagar is roaming around The Riverlands riderless. This gives us scenes where they can build the relationship between Alys & Aemond, explains why he hasn't rejoined the war(he's recuperating from being wounded) & makes him less of a horrible atrocities & warcrimes guy he is portrayed as in the books since he's not actively directing Vhagar to burn anything. Oh, & it gives a reason for Rhaenyra to send Alicent to Harranhal & separate her from Helaena. 🤷‍♀️  It's a lot of changes to the source material but it gives the actors more scenes together. How everything ends up concluded by the end will determine if the changes worked or not. Sometimes it feels a little too concocted & soap opera-y (like Sunfyre just laying lifeless for so long or Alicent going to Harranhal to kill Aemond or Helaena not riding or Rhaena instead of Nettles) but I do enjoy the dramatic moments between characters & the performances by the actors.
