One suggestion.  2:1 sand and Portland is not waterproof.  Use bondkote before tile thinset.

For the mortar bed for the tile you use two to one ratio of sand mixed with  grey portland cement mixed with Type S. Am I correct? I had trouble hearing what you said.

And also for your travertine coping mud bed mixing ratio (with brand name) along with coping thinset?

Looks like you do things right. True out your bond beam, use thinset so mortar bed adheres to the gunite wall and then the mortar bed. Nice work. Bro you need to use knee pads please, you will pay later if you dont.
