Saltfish fritters done right.
I used to hate them until I fixed one simple mistake that completely changed the flavor. Crispy on the outside, soft and packed with flavor on the inside, this method takes your fritters to another level.
If you’ve ever had bland or greasy fritters, this is the technique you need.

Me could just eat one of them right now-with my cup of tea in an England.

My mom always make them for me on every visit. No sauting, straight from the frying pan to my plate for breakfast. I love them warm and crunchy. Coffee to wash them down.

You are a great teacher and you leave out no detail no matter how small and I like that.

I put my fresh thyme leaves in just before placing in the hot oil that gives me all those volatile automatics into the fritters just like your example of the scotch bonnet.

If memory serves me correctly I’m sure when my gran used to make them she used to put a tups of curry powder into the batter but I’m not entirely sure 😅

My mouth sprang water as soon as I saw the picture 🥰
I've got to get some saltfish before the price goes up. In London it's almost £5 a pack. They used to call it 'poor man's food.' Not anymore.

In Trinidad some of us call them Saltfish Accra. Similarly, they are varied depending on personal preference. I associate scallions/Chive with them also. We like having it with tamarind or grated, green mango chutney.

1. After boiling the fish save the water 2. De-leaf(remove) thyme sticks and leave thyme in the mix, 3. Milk spoils the batter faster if you are making bigger batches. 4. If you want flat fritters use this recipe, if you want them more like golf balls then use more baking powder and more oil. (No tomatoes), add parsley.

You are a top chef Nick! I have never see fritters done with so much thought and effort. I know this must be delicious!

Our fish cake are made with potatos. Fritters are the fried ones. Potato ones are oblong in shape and have more of the saltfish in the mixture and lightly fried because the potaters are precooked. Onion garlic and scallions added.
