What a great meal. Redfin are such a delicious fish, and I might have to give that salad a go with your recommendation of lettuce instead of cabbage.

If you want to try for a light, thin tempura like you'd find in an asian restaurant, use 50/50 potato starch (potato flour) and regular low protein flour (anything under 10%). It reduces gluten formation and fries up very differently to straight flour.

Mate. Keep the beetroot salad simple. Rocket, beetroot, walnuts and goats cheese.

Yummy....probs white pepper in the tempura mix mate as that is used mostly in asain cooking and wont stuff the color of your batter
