Gluten-free oat flakes https://amzn.to/44mOIMM or buckwheat flakes https://amzn.to/4eFcKrn
A bowl and a spoon
A 20x11 cm loaf pan https://amzn.to/4vhrtzz
INGREDIENTS
500 grams buckwheat flour
500 grams/ml hot water
50 grams mixed seeds (sunflower, pumpkin, flax)
50 grams ground flaxseeds
1 tablespoon apple cider vinegar (optional)
1 teaspoon honey or rice malt
Gluten-free oat flakes for decorating (optional)
DIRECTIONS
1. Dissolve the honey in the hot water.
2. In a bowl, mix the buckwheat flour and water until well combined.
2. Add the seeds, both whole and ground, to the dough.
3. Add the apple cider vinegar, which will make the gluten-free dough soft and airy.
4. Knead the dough well.
5. Lay out a sheet of baking paper on a cutting board and sprinkle with the oat flakes.
6. Pour the dough over the oat flakes and begin to shape the loaf, which should be completely covered with the oat flakes.
7. Place the loaf, along with the baking paper, into the pan, cover with plastic wrap or another piece of paper and a tea towel.
8. Let the dough rest for about two hours at room temperature. This time will allow the ground flaxseeds to work their magic, compacting the dough and giving it more consistency.
9. Bake in a preheated oven at 180°C (350°F) for about 35-40 minutes.
10. Enjoy your meal! CELIAC!
Margharet's tip: You can slice the bread and freeze it, or toast the slices, which will make excellent natural, gluten-free toast.
