Boiling pins food at 100 degrees. Roasting, frying, and toasting push the surface far past that. The chemistry wakes up at roughly 120 degrees. It peaks near 170. And it forms while the food is still golden — not just when it is burnt.

Acrylamide crosses the intestinal wall easily. It enters your bloodstream. And then it arrives at the liver. This is where the story becomes genuinely strange. And this is where almost every popular account of this topic goes wrong.
