One pot, creamy chicken, and stuffing casserole

1 to 2 pounds of boneless chicken (can be breast or thighs) cubed
One can of cream of chicken soup
One cup sour cream
One box of cornbread stuffing (to make it keto find keto bread and make cubes from that)
Half stick butter
1 1/2 cups chicken broth
4 ounces Swiss cheese
Salt , pepper, dried minced onion, garlic powder, and Mrs. Dash seasoned to your liking.
Spread the cube chicken into a 13 x 9 casserole.
Seasoning the chicken with the spices.
In a separate bowl, mix the one cup of sour cream, along with the one can of cream of chicken soup. Pour that mixture on top of cube cubed chicken.
The next layer top with 4 ounces of Swiss cheese.
Spread one box of cornbread stuffing on top of that Swiss cheese.
Pour one and a half cups of chicken broth then do with the half a stick of butter.
Bake at 375 until warm and bubbly, roughly 45 minutes.
This is a creamy delicious meal that I served with a sweet potato or baby potato on the side.
In all reality, I could have put potatoes right into the cubed chicken mixture and let it all cook in one pot. Could add broccoli you could add spinach. You could add whatever your little heart desires.
This is a kid, friendly, warm and cozy meal for the fall.
